Vliegtuigeten kan van een vlucht een beleving maken

Ik bedacht een aantal jaar geleden een belevingsconcept voor intercontinentale vluchten. Met vliegtuigeten als basis om van een vlucht een persoonlijke beleving te maken. Nu ik net weer zo’n vlucht achter de rug heb, blijkt weer hoe actueel dit concept nog steeds is.

Elke situatie vraagt zijn eigen aanpak

Het is nog geen 2 dagen geleden. We vlogen van Dar es Salaam terug naar Amsterdam. Een nachtvlucht die tegen 12 uur ‘s nachts vertrok. Op zich prettig, want dan kun je misschien nog een paar uurtjes slaap pakken. Maar ondanks het tijdstip begon het personeel het gebruikelijke werkproces af te draaien. En dus kregen wij rond half 2 ‘s nachts de vraag of we ‘chicken or beef’ wilden eten. Pardon? Als je eet, krijg je nieuwe energie en doe je geen oog dicht. We hebben geweigerd en onze excuses aangeboden, echt zonde van het eten. Helaas viel het ontbijt ook tegen: een soort van aardappeltortilla met groenten en iets van tiramisu erbij. Niet te doen. Geen prettige beleving en weer superzonde (ik kan echt heel slecht tegen eten weggooien…).

Nog geen duurzame verbetering

Eerlijk: ik ben mijn onderzoek destijds niet gestart vanuit frustratie, ik vond het eten in een vliegtuig altijd wel een soort van grappig. Alhoewel ik veel mopperreacties online vond, waarmee voor mij de noodzaak voor een nieuw concept wel pijnlijk duidelijk werd. Als een vliegtuig eenmaal in de lucht zit, gebeurt er veel dat de smaak van eten beïnvloedt: de hoogte, de luchtvochtigheid en ook de constante ruis zorgen ervoor dat je minder proeft. Maar ook het feit dat je eten opgewarmd wordt, doet niet veel goeds voor de smaak. Ook over mogelijke verbeteringen is al veel geschreven: bestel een aparte maaltijd (als iedereen dat doet, heb je precies dezelfde situatie), neem je eigen eten mee (en de vliegtuigmaatschappij alles laten weggooien…?), vlieg business-class… (Euh?! Wie kan dat betalen?).

Laat conventies los en denk vanuit beleving

Dat moest echt beter kunnen. En het kan! Laat vastgeroeste conventies los. Zorg dat je niet hoeft op te warmen. Kies voor ‘handzaam eten’ (wíe heeft er toch ooit bedacht dat je op 2 vierkante centimeter kip moet zitten snijden…?!) en portioneer het in stapelbare bakjes. En zorg dat de maaltijd en zijn presentatie past bij de eter. Laat mensen bij het inchecken al een maaltijd kiezen, dan hoef je niets weg te gooien. Bovendien krijg je bij een keuze vooraf informatie waarmee je de vlucht nog verder kunt personaliseren. Ik geloof nog steeds in de kracht van dit concept. En ik geloof ook dat het prima te implementeren is en zelfs efficiënter en duurzamer is dan de huidige werkwijze.

Airline food can turn a flight into an experience

A few years ago I designed a serviceconcept to improve the experience of intercontinental flights. With the airline meal as a basis for turning a flight into a more personal experience. Now that I have just returned from another intercontinental flight, it becomes clear that there still is a need for a concept like this.

Every situation requires its own approach

Less than 2 days ago. We travelled back from Dar es Salaam to Amsterdam. A night flight that departed around 12 o’clock at night. In itself kind of pleasant, because you get a few hours of sleep. But despite the time, the staff followed the usual process. And around half past 2 in the morning we were asked whether we wanted to eat chicken or beef. Excuse me? When you eat, your energy level goes up and you don’t sleep. We refused and apologized, what a waste of good food. Unfortunately, breakfast was also disappointing: a sort of potato tortilla with vegetables and something tiramisu-ish on the side. It was… well, not so good. Not a pleasant experience and what a waste. I hate throwing good food away…

No sustainable improvement yet

Honesty: back then I didn’t start my research out of frustration. I always found the food in a plane kind of funny. Although I discovered a lot of grumpyness around airline food online, which made the need for a new concept painfully clear to me. In the air there’s a lot going on that influences the taste of food: the altitude, the humidity and also the constant noise make you taste less. But also the fact that your food is being reheated reduces the flavour. Possible improvements mentioned online: order a vegetarian or Kosher meal (if everyone does that, the situation will be exactly the same, now will it?), bring your own food (and let the airline company throw everything they prepared away …?), fly business-class .. . (Say whut?! Who can afford that?).

Let go of conventions and think ‘experience’

There have to be better options out there. I really think improvement is possible. Let go of fixed conventions. Just don’t reheat stuff. Serve food that is ‘easily edible’ (who ever said you have to eat a chicken with a knife and fork on a mini-table…?!) and serve it in practical stackable boxes. And make sure that the meal and its presentation suits the eater. Let people choose a meal at check-in, so you don’t have to throw anything away. In addition, when the passenger makes his choice beforehand, you’ll get information with which you can further personalize the flight. I still believe in the power of this concept. And I also believe that it is relatively easy to implement and more efficient and sustainable than the current way of working.
