Wereldse eiergerechten

Maar dan… het ei… Dan maak je het jezelf dan weer niet echt makkelijk mee ;-) Niks nationaal gerecht, volgens mij eet de hele wereld eieren. In de meeste landen is er wel een typisch gerecht met eieren te vinden. En zo niet, dan serveren ze iets uit een ander land. Ik noem eens wat:

  • Franse salade niçoise
  • Israelische shakshuka
  • Mexicaanse huevos rancheros
  • Spaanse tortilla
  • Chinese Foe yong hai
  • Japanse tamagoyaki
  • Americaanse eggs benedict
  • Koreaanse bibimbap
  • Indonesische nasi goreng
  • full English breakfast met scrambled eggs

En wij maken er een lekker gevuld omeletje van of dippen ‘broodsoldaatjes’ een zachtgekookt eitje. Ontbijt, lunch of diner, overal ter wereld worden er eieren in verwerkt. We all love eggs!

Signature egg dish

Na al die wereldgerechten landen we in Scandinavië; een van de meest booming culinaire regio’s van dit moment. Door de pure, seizoensgebonden keuken en de vernieuwende manier van koken, onder andere op de kaart gezet door René Redzepi. Een van zijn signature dishes is ‘The Hen and the Egg’. De omgeving speelt hierin een belangrijke rol. Redzepi bereidt al zijn gerechten met producten van eigen bodem en op traditionele wijze. Bij het bedenken van een gerecht vraagt hij zich af: “Hoe krijg ik Scandinavië op een bord?” Zo is ook The Hen and the Egg ontstaan: een gebakken ei, gepresenteerd op een bedje van hooi. Gegarneerd met verse kruiden en wilde bloemen. Simpel en puur, geurend naar het Deense landschap. Ruikend en proevend ervaar je Redzepi’s visie. Een verhaal op een bord.

All around in the world, people have specific customs and rituals around food or a special national dish is being served. I love to travel and discover these kind of things for myself! In this item, I want to share these traditions and dishes with you. And inspire you to experiences other foods and eating habits.

Worldly eggs

But then … the egg … Not the easiest one to begin with ;-) No national dish, eggs are being eaten worldwide. Most countries have a dish with eggs. And if not, they serve something from another country. For example:

And we make Dutchies ourselves make a good stuffed omelet or a soft-boiled egg with ‘bread soldiers’ for dipping in the yolk. Breakfast, lunch or dinner, eggs are being used and eaten all over the world. We all love eggs!

Signature egg dish

After all travelling all these countries, we land in Scandinavia; one of the most booming culinary regions at this moment. The pure, seasonal cuisine and innovative way of cooking set this region apart. And of course they have René Redzepi. ‘The Hen and the Egg’ is one of his signature dishes, in which the surroundings play an important role. Redzepi prepares all his meals with homegrown produce and in traditional ways. When imagining his dishes, he asks: “How do I bring Scandinavia to the plate?” That’s exactly what The Hen and the Egg is: a fried egg, served on a bed of hay. Garnished with fresh herbs and wild flowers. Simple and pure, with the aroma of the Danish landscape. When you smell and taste this dish, you’ll experience Redzepi’s vision. A story on a plate.
