We hadden het in dit magazine al kort over kweekvlees. Stel je eens voor dat, over pakweg 20 jaar, kweekvlees onze dagelijkse realiteit is. Hoe zou het er dan uitzien? En welke gerechten zou je ermee maken? In Het Kweekvlees Kookboek geven koks, ontwerpers en kunstenaars vorm aan hun ideeën over de mogelijkheden.

Nieuw eten, nieuwe eetcultuur

Wetenschappers verwachten dat kweekvlees een duurzaam en diervriendelijk alternatief zal bieden voor het vlees zoals we dat nu eten. Er zijn immers veel minder dieren voor nodig en er hoeft geen koe, varken, kip of kalf voor te sterven. Al wat nodig is zijn een paar dierlijke cellen, welke in een bioreactor worden opgekweekt. Voor veel mensen klinkt dat behoorlijk onaantrekkelijk; vlees uit een laboratorium. Laten we eerst de eetcultuur die het met zich meebrengt verkennen en dan bepalen of we bereid zijn om kweekvlees überhaupt te eten. Dat kan met Het Kweekvlees Kookboek.

Speculatieve ontwerpen

Kweekvlees hoeft niet per se eruit te zien als de hamburgers en worstjes die we nu kennen. Dus geen volgende vegetarische schnitzel-variant. Met de in-vitro technologie zijn vormen mogelijk die ons voorstellingsvermogen wellicht te boven gaan. In het boek wordt met sterren aangegeven hoe waarschijnlijk het is dat het recept op korte termijn gemaakt kan worden. Recepten met 5 sterren kunnen vandaag de dag al gemaakt worden, recepten met 1 ster zijn verre toekomstmuziek. Het doel van de makers is niet om de toekomst te voorspellen. Het gaat om het concreter maken van de mogelijkheden, zodat we beter kunnen beslissen wat we zouden willen in de toekomst.

Food for thought

De recepten variëren van Gebreid Gehakt tot Vleesverf en van Dodo Nuggets tot Labzwezerik. Of wat dacht je van een hartige vleescocktail of flinterdun origamivlees? De recepten zijn ontwikkeld door een team van koks, ontwerpers en kunstenaars. Ze spelen in op één van de issues waarin kweekvlees een rol zou kunnen spelen: duurzame productie, geen dierenleed, voorkomen voedseltekorten of nieuwe eetcultuur. Voorlopig is het nog niet mogelijk om deze thuis in onze eigen keuken te bereiden. Maar ze zullen zeker voer voor discussie en food for thought zijn!

De gerechten uit Het Kweekvlees Kookboek kun je proeven in het conceptuele restaurant Bistro In Vitro. Je kunt nu alvast je eigen menu samenstellen. Reserveer nu je tafel voor augustus 2028.

The In Vitro Meat Cookbook

In this magazine we already talked about in vitro meat. Imagine that in about 20 years from now, in vitro meat is our daily reality. What would it look like? And what dishes would you cook with it? In The In Vitro Meat Cookbook chefs, designers and artists shape their ideas about the possibilities.

New food, new food culture

Scientists expect that in vitro meat will provide a sustainable and animal-friendly alternative to meat as we know it. There are much fewer animals needed and no cow, pig, chicken or veal needs to die. All that is necessary are a couple of animal cells, which are grown in a bioreactor. For many people meat from a laboratory sounds pretty unappealing. So let’s first explore the food culture that entails and then decide whether we are willing to eat in vitro meat. That’s what the In Vitro Meat Cookbook is here for.

Speculative designs

In vitro meat doesn’t necessarily have to look like the burgers and sausages we know today. So it won’t be the next vegetarian schnitzel. With the in-vitro technology possibilities beyond our imagination become within reach. The book indicates with stars how likely it is that the recipe can actually be made short-term. Recipes with 5 stars can be made today (but it’ll cost you big time), recipes with 1 star are distant future. The purpose of the makers is not to predict the future. It is about concretizing the opportunities so that we can better decide what we would like in the future.

Food for thought

The recipes range from Knitted Steak to Meat Paint, Dodo Nuggets and Lab Sweetbread. Or what about a savory Meat Cocktail or Crane Meat Origami? A team of chefs, designers and artists developed the recipes. They are all based one of the issues that in vitro meat could play a role in: sustainable production, no animal suffering, prevention of food shortages or new food culture. At this point it’s still not possible to prepare the recipes in our own kitchen. But they will certainly feed the discussion!

You can taste the dishes from the In Vitro Meat Cookbook in Bistro In Vitro, a conceptual restaurant. You can already create your own menu or make a reservation for August 2028.
