Culinaire conserven

Dit artikel gaat over… blikvoer? Nee… een heuse culinaire conservencultuur!

In Japan ligt een restaurant waar je eet uit blik. Je kiest uit zo’n 300 blikjes je favoriete hapje, de medewerker maakt het voor je open en je krijgt het – al dan niet opgewarmd – geserveerd met plastic bestek. Niet direct iets dat in ons land zou aanslaan. Het project Coco Conserven ambieert een meer culinaire conservencultuur.

Conserven concepten

Bij Mr. Kanso’s Japanse conservenrestaurant maak je een keuze uit honderden soorten ingeblikt voedsel, uit de hele wereld. Van curry tot salade en beyond. Je gaat met je blikje naar de medewerker, die het voor je open maakt en eventueel opwarmt. De prijzen van de conserven variëren van € 1,50 tot zo’n € 15,-. Het bleek een succesconcept; inmiddels zijn er in Japan al 17 vestigingen. Ook op andere plekken ter wereld bestaan er conserven concepten. Bijvoorbeeld (de inmiddels gesloten pop-up) Tincan (Londen),  Can the Can (Lissabon), Au Pied de Cochon (Montreal) en Loja das Conservas (Lissabon).

Van ‘armoedig blikvoer’…

In Nederland heeft een dergelijk concept (nog?) weinig kans van slagen. Hier heeft ‘blikvoer’ een wat ‘cheap’ imago. We denken aan ‘rantsoen’ en we vinden het wat armoedig. Dat is in bijv. Zuid-Europa heel anders. Denk aan die prachtige blikjes met sardientjes en ansjovis. Kleine kunstwerkjes; echte ‘blikvangers’. En naast mooi ook heel prima voedsel. Het lijkt dus vooral een cultureel bepaalde gedachtenkronkel die ons in de weg zit. Eentje die ons er bovendien van weerhoudt om te innoveren met blik. Het is dus tijd voor een meer culinaire conservenblikcultuur.

…naar culinaire conservencultuur

Dat is een van de doelen van Coco Conserven. Dit nieuwe project van de mensen achter de Tostifabriek moet mensen een andere blik op eten uit blik gaan geven. En het imago van ‘blikvoer’ op te vijzelen. Want blik is een duurzaam verpakkingsmateriaal, dat voedsel lang en energiezuinig conserveert en goed recyclebaar is. Ze kunnen inmiddels het hele inblikproces zelf uitvoeren. En ze maken rillette, ragout en ribollita, een Toscaanse soep. In een echte fabriek in Zaandam. Door te koken met restpartijen worden de conserven een pleidooi voor een houdbaar voedselsysteem en tegen verspilling.

Wat denk jij? Is Nederland klaar voor culinaire conserven? Vind je het zelf een goed alternatief? Of gaat niets boven zelf koken met verse producten?

Korte ‘terugblik’: het conservenblik werd voor het eerst geïntroduceerd in het Franse leger. Het was een hele vooruitgang omdat het materiaal zoveel lichte was dan glazen potten, maar het voedsel net zo goed geconserveerd kon worden. Verrassend genoeg werd pas 50 jaar na de introductie van het conservenblik de blikopener uitgevonden!

Culinary canned food

In Japan, there’s a restaurant where they serve canned food. You make a choice from the shelves with around 300 different canned foods, they open it for you and you eat it – heated if you wish – directly from the can with plastic cutlery. In a lot of countries, including The Netherlands, a concept like this wouldn’t be very successful. The project ‘Coco Conserven’ (Coco Canned Goods) aims to improve the image of canned foods.

Canned concepts

At Mr. Kanso’s Japanese canned food restaurant you choose your ‘meal’ out of hundreds of types of canned goods from all around the world. From curry to salad and beyond. Prices vary from € 1.50 to around € 15. It proved to be a successful concept: there are already 17 branches in Japan and that number is still growing. There are also canned concepts in other places in the world: Tincan (former pop-up in Londen, now closed), Can the Can (Lisbon), Au Pied de Chochon (Montreal) and Loja das Conservas (Lisbon).

From ‘shabby’…

In the Netherlands (and maybe your country as well) such a concept has little chance of success. Here, canned foods have a ‘cheap’ and ‘shabby’ image. Very unlike the south of Europe, where canned foods are considered good food. Just think of those beautiful cans with sardines and anchovies, they’re practically art. So it merely seems a cultural mindset that is standing in our way when it comes to canned food. We don’t really want to eat it and thus there won’t be any innovation in this field. It’s time for a more culinary culture for canned foods.

The project ‘Coco Conserven’ (Coco Canned Goods) is a new project in The Netherlands that wants to reintroduce canned foods and boost their image. Tin is a sustainable packaging material that keeps food good for a long time and is recyclable. The product are made from remnants. And above all, the foods are tasteful and good. In the tincans they conserve rillettes, ragout and ribollita, a Tuscan style soup. With their canned goods, the team from Coco Conserven makes a plea for a sustainable food system and a reduction of food waste.

A little can-history: the tin can made it’s first appearance in the French army. It was a big improvement for the solidiers’ provisions, because it was so much lighter than glass jars. And the food was conserved just as good. Surprisingly it took another 50 years for the can opener to be invented!
